Casings are crucial for preserving the quality of the sausage filling. Although casings themselves provide a barrier, they still require proper storage to maintain the sausage's aroma and prevent spoilage.
So, how should casings be stored? They must be kept in a cool (below 25°C), dry, well-ventilated, and dark environment. Storing casings in high-temperature and humid conditions will cause sausages to deform, reduce their shrinkage rate, alter their specifications, and lead to spoilage. Therefore, they must be stored in a dry and well-ventilated place. Typically, the storage period for casings is only three months.
As for the sausages we purchase, refrigerating them helps prevent spoilage and allows them to be stored for over three months. If the sausages are stored at room temperature, they should be consumed before the expiration date.
